Kashmiri Chai (Pink Tea)
This tea is very good for health due to its richness in taste and ingredients but finding original Kashmiri green tea leaves is a must. If you are on a diet or health conscious may be you can not have the privilege to enjoy this delicacy but I can bet that once you have t you can’t forget the taste of it.
The tea is a mixture of mixed grounded nuts( some almonds and pistachios usually and dried coconut powder occasionally), cardamom, milk, sugar or honey, baking soda( just a pinch to get pink authentic color of this drink) and green tea leaves.
Weddings in winters generally have Pink Tea in replacement of cold drinks to refresh the guests. the touch of nuts make it even better.
Ingredients :
4 teaspoon green tea leaves ,
4-6 seeds of green cardamom ,
1/2 cup of Sugar,
A pinch of bicarbonate of soda ,
3 cups of milk,
6 teaspoons pistachio & Almonds, grounded ,
4cups of water ( 2 Cups of chilled water).
Instructions :
1. Pour water in a heavy based large pan and bring to boil. Add seeds of green cardamom and cover at low flame after adding tea leaves for 4-5 minutes.
2. Pour in it about 2-3 cups of cold water or enough water to make four cups in all. Bring to boil and simmer for 4-5 minutes. Remove from heat, strain and keep aside.
4. Boil the milk over low heat. Pour prepared tea water (Qahwa) in the milk. Bring to boil, add sugar and simmer for 3-5 minutes over low heat.
5. Remove from heat and pour into cups. Pour 1 tablespoon of cream or malai. Sprinkle 1 teaspoon of nuts over it. Flavor of the tea depends on the quality of the green tea leaves.
